Week 2- Oven Baked Panko Chicken and Roasted Potatoes

Baked Panko Breaded Chicken

o   2 lbs chicken tenderloins or chicken breasts
o   1 cup all-purpose flour
o   pinch salt and pepper (to season flour)
o   1/2 tsp Paprika
o   1/2 tsp garlic powder
o   1/2 tsp onion powder
o   3 large eggs
o   2 cups panko breadcrumbs
o   1/4 cup finely grated parmesan cheese
o   olive oil cooking spray
o   Directions:
Before getting started, pre-heat the oven to 425 degrees F. To ensure crispy tenders, a very hot oven is required. Next you need a plastic bag and a kitchen mallet. Place chicken inside bag and tenderize using the mallet. Make sure your chicken is the same size and thickness. You will need 3 bowls to prepare the ingredients for coating the chicken. In the first bowl, add the flour and season it with salt, pepper, paprika, garlic powder, and onion powder. In the second bowl, whisk the eggs well. The third bowl is for the panko bread crumbs mixed with the grated parmesan.
Oven Roasted Herb and Garlic Parmesan Potatoes. These Oven Roasted Herb and Garlic Parmesan Potatoes are the perfect side dish to whatever you're making for dinner tonight! Perfectly crispy on the outside and light and fluffy on the inside!
Ingredients
·      2 pounds Yukon gold potatoes or any type of potato, halved or quartered depending on size
·      3 tbsp olive oil
·      1 tbsp chopped fresh herbs (rosemary and thyme)
·      1 tsp kosher salt
·      1 tsp garlic powder
·      cup shredded Parmesan cheese (REAL Parmesan)
Instructions
1.     Preheat oven to 375 degrees.
2.     Combine fresh herbs, salt, garlic powder, and Parmesan cheese in a small bowl. Set aside.
3.     Place potatoes in a large bowl and drizzle with olive oil. Toss to coat.
4.     Sprinkle with the seasoning mixture, tossing to coat once again.
5.     Spread potatoes in a single layer on a baking sheet. Sprinkle on any seasoning left in the bowl.
6.     Bake for 20 to 30 minutes, depending on size, or until potatoes are tender.
7.     Serve immediately.
