Week 1 Advanced Cooking - Creamy Black Bean Taquitos


Creamy Black Bean Taquitos
Ingredients:
  • 8 oz cream cheese (room temperature) 
  • 2-15 oz can black beans 
  • 2- 4 oz can diced green chilies 
  • 4 green onions 
  • 2-3 dashes hot sauce (optional) 
  • 1/4 tsp garlic powder 
  • 1/4 tsp salt (or to taste) 
  • 24 6-inch corn tortillas 
Directions: Rinse and drain the black beans. Drain the diced green chilies. Slice the green onions. Add the cream cheese, black beans, green chilies, green onion, hot sauce, garlic powder, and salt to a bowl.
Stir together until evenly combined, then taste and adjust the salt or hot sauce to your liking.

Stack 5 tortillas on a plate, cover with a damp paper towel, and microwave for about 20 seconds to soften (this helps prevent them from cracking when rolled).

Heat a large non-stick or cast-iron skillet over medium heat. Working quickly

Place about 2 Tbsp of the black bean filling in each tortilla then roll tightly closed.
Once all five are filled, add about 1 Tbsp cooking oil to the skillet, give it a few seconds to heat (it should shimmer), then add the filled taquitos seam side down.

Cook the taquitos on each side until brown and crispy, then transfer to a clean plate.
Repeat the process in small batches of five, adding a little more oil to the skillet each time until all the filling has been used (about 24-30 taquitos). Serve while still hot


Week 1 French Toast Roll-Ups


French Toast Roll-Ups


Ingredients
·       8 slices soft white sandwich bread
·       3 tablespoons Nutella 
·       2 large eggs
·       3 tablespoons milk
·       1/3 cup granulated sugar
·       1 teaspoon ground cinnamon
·       2 tablespoons unsalted butter, for greasing the pan or spray
·       maple syrup, for serving (optional)

Directions
1.  Trim the crust from the bread and flatten each slice out with a rolling pin.
2.  Place a heaping teaspoon of your filling an inch from one end of the bread, and spread it out in a strip. Roll the bread up and repeat with the remaining slices.
3.  In a shallow bowl thoroughly whisk the eggs and milk together. In another shallow bowl, mix the sugar and cinnamon together.
4.  On a griddle (or large sauté pan), melt 1 tablespoon butter over medium heat. Coat the rolls with the egg mixture and place seam side down on the griddle. Cook for about 1-2 minutes per side, until golden brown. Add more butter to the griddle as needed for the second batch.
5.  Place the hot rolls into the cinnamon-sugar and roll until completely covered, gently shaking off any excess.
6.  Serve with maple syrup, if desired.

I believe the kitchen is the tastiest place to learn! Taking risks, learning from mistakes, following directions, fostering creativity, curiosity, resilience, becoming independent, and trying new things: these are qualities we seek to develop in our children and there’s no better place to nurture them than the kitchen. This is a “hands-on” class and every child will get participate in every lesson.
