Advanced Cooking Class Potatoes Au Gratin Week 2


Potatoes Au Gratin
Ingredients:
·       2 pounds Russets or Yukon Gold Potatoes or Gold Potatoes peeled and sliced
·       1 small yellow onion peeled and sliced thinly
·       3 Tablespoons butter
·       4 large garlic cloves minced
·       1/4 cup all-purpose flour
·       1 cup chicken stock
·       2 cups whole milk
·       1 teaspoon Kosher salt
·       1/2 teaspoon black pepper
·       2 cups freshly-grated sharp cheddar cheese (or more if you please)
·       1/2 cup grated Parmesan cheese

·      Preheat oven 400 degrees Fahrenheit

Cream sauce
·      Use Food Processor for ½ onion.
·      Remove skin on ½ onion and cut in four pieces
·      Place inside food processor and puree
·      Melt butter in a medium-sized saucepan on medium heat
·      Add onion mix to pan on the stove and sauté for 4-5 minutes
·      Add 4 cloves of minced garlic (use garlic press)
·      Sauté for 1-2 minutes more
·      Gradually add flour and stir until well combined
·      Slowly add chicken stock (whisk), salt, pepper and stir until smooth
·      Slowly add milk continue stirring/whisking until combined
·      Simmer over low heat for 1-2 minutes stirring constantly. 

·      Grease a 2-quart baking dish with cooking spray and set aside.
·      Peel potatoes
·      Using Food Processor, use slicing attachment
·      Slice all potatoes
·      Do not use your fingers with the food processor, use tools to push potatoes in
·      Spread half of the potatoes evenly in baking dish
·      Using a ladle, pour half of the cream sauce over potatoes
·      Sprinkle with Parmesan cheese and 1 cup of grated cheese
·      Place the rest of the potatoes on top. Cover with remaining cream sauce and cheese
·      Cover pan with foil and bake for 45 minutes
·      Hint: not a bad idea to place a sheet of foil on the oven rack under the baking dish in case the cream sauce should boil over.
·      Remove foil and continue baking uncovered for 30 minutes or until potatoes are cooked through
·      Remove from oven and allow resting time of 10 minutes prior to serving
·      Enjoy!
